Start in Singapore; centuries before the birth of ‘fusion cuisine’, there was Singapore with its intricately multicultural heritage and culinary traditions from Chinese, Arab, Indian, Persian, and Malay communities. Dive into Hawker Centres, the treasured national symbol of the country where street food reaches its highest expression in lively (and hygienic!) complexes. Each cart is hyper-specialized; owners have been making their dish and only this dish for years, perfecting it to an art. Over five days here we’ll explore the many different cultural and gastronomic expressions of this lively city.
Then to Vietnam where we explore graceful Hoi An and energetic Saigon. Here more delicious dishes compete for your attention as you sample foods with a little taste of France and some flavours of China influencing a cuisine noted for its complex flavours combining spicy, sour, bitter, salty, and sweet. Hoi An is a delightfully atmospheric town with a lovely riverside setting. The UNESCO-listed old town is filled with well-preserved merchant houses, Chinese temples, and ancient tea warehouses. Muscular Saigon dazzles with its vitality. Timeless alleys and creative niches blend with skyscrapers and each district has its own character and food scene.
Experience three cooking classes, foodie walks, and Jusep’s off-piste explorations on this curated culinary experience. With extended stays in just three bases, our pace is relaxed so we can really dig in to everything we discover.
