When people in Vancouver are asked about Indian cuisine, there is one word that cannot fail to spring to mind; Vij’s. This iconic restaurant has been a renowned, award-winning constant of Vancouver’s culinary landscape for the past 25 years. So taking a gastronomic tour of India with Vij’s founder and co-owner Vikram Vij is something global foodies would jump at.
That’s exactly the opportunity being offered to UBC alumni and their friends in 2020, as Chef Vikram hosts a curated culinary adventure across Southern India. From the shores of Pondicherry, via technicolour temples in Madurai, extravagant mansions in Chettinad, through the fragrant spice gardens and tea plantations of Perivar, and the backwaters of Kerala, guests will enjoy hands-on cooking classes, hosted presentations, and guided walks through markets and bazaars.
Throughout, Vikram will regale the group with stories of his life and childhood, his interpretation of the dishes they experience, and share his vision of the future of cuisine through flavour and sustainability.
While Vikram’s international culinary tours
are a staple of his calendar, it’s not often people get to travel with him to
his homeland. South India holds a fascination for him because of the unique way
they integrate spices into their cooking, and Vikram travels not as a chef, but
like a student, bringing culinary influences back from each tour to incorporate
them into the menus of his restaurants, Vij’s, My Shanti, Rangoli and Sutra.
